being cook: Coconut Flour Cheesy Pizza
Like most God-fearing Americans, I love pizza + cheese. Imagine how happy I was when I made a pizza recipe with cheese in the crust! Bonus! Cue: happy dance! This pizza is delicious. You can load the top with anything you want. I like to add all kinds of veggies. Since cheese is in the crust, I normally skip it on top. I gave into my indulgences this time, however, and added a few slices of fresh mozzarella. Whatever your pleasure, you’ll love this flavor-packed pizza!
INGREDIENTS
For Crust:
1/2 cup coconut flour
1/4 cup shredded parmesan cheese
1/4 cup shredded mozzarella cheese
3 tablespoons almond flour
2 tablespoons coconut oil
4 large eggs
1 teaspoon garlic powder
a sprinkle of salt to taste
1 teaspoon oregano
1 teaspoon of thyme
1 teaspoon of basil
Optional: a sprinkle of red pepper flakes
For Topping:
-one dozen cherry tomatoes, sliced
-sautéed mushrooms
-fresh zucchini slices/spirals
-fresh mozzarella
-1/4 cup organic tomato paste
-a sprinkle of fresh rosemary
DIRECTIONS
Add all crust ingredients (except mozzarella) into a bowl and mix until smooth. Add the mozzarella cheese to the crust mixture, distributing the cheese evenly through the mixture. You want an awesome cheesy crust! Pre-heat your oven to 375 F.
Grease a pizza pan with coconut oil. Spread pizza crust mixture evenly on pan.
Bake until the crust looks firm and crispy, about 20-25 minutes.
Once out of the oven, spread tomato paste on top. Add cherry tomatoes, cheese, and other toppings as you like. Put the pizza back into the oven and bake about three minutes, until the cheese melts. Sprinkle with zucchini. You can also eat the topping raw without the three minute heat up. ENJOY!
