being cook: Quinoa Pizza

Pizza is my love language. What's not to love? Here's a pizza recipe with a crust made of quinoa. With this high protein grain crust, you can eat your pizza and be healthy too! Woot! This pizza is the REAL deal guys. It's yummy and just works. Plus my husband Aaron likes it... BONUS! Be sure to try this for a healthy spin on everyone's favorite food!

This recipe will make one 8 inch pizza:

INGREDIENTS  

For Crust: 

-1 cup quinoa (soak for eight hours)  

-1 teaspoon apple cider vinegar

-a sprinkle chili flakes

-1 teaspoon of oregano

-1 teaspoon of basil

-1 teaspoon of chives

-a pinch of salt

For Topping:

 -one dozen cherry tomatoes, sliced. 

-one dozen pitted black olives, sliced

-one handful of shredded cheddar cheese

-two tablespoons organic tomato puree  

-handful of arugula 

DIRECTIONS

Put quinoa in a large bowl of water and soak for 8 hours. Once the quinoa is done soaking, preheat the oven to 370 degrees F. Drain water from the quinoa with a colander. 

Place drained quinoa into a big bowl and mix in all the other crust ingredients. Put this quinoa crust mixture into a food processor. Blend until a smooth mixture forms.

Grease a pizza pan (I actually use a cake pan) with olive oil. Pour in pizza crust mixture and spread evenly.  

Bake until the crust looks firm and crispy. Should take 15-20 minutes. 

Once out of the oven, spread tomato paste on top and add cherry tomatoes, olives, and cheese. Put the pizza back into the oven and bake about three minutes, until cheese melts. Sprinkle with arugula. You can also eat the topping raw without the three minute heat up. Just add arugula to the top and eat. ENJOY!
