being cook: Zesty Chicken Tacos

Some days I really don't have one extra second to cook dinner. You know the kind of day I’m talking about. This month travel + work have been an extra dose of crazy, which means there isn’t much time to cook dinner. For days like this I love to make my Zesty Chicken Tacos. They are perfect when you are in a time pinch. I partnered with the kind folks at Whole Foods to show you guys this quick, easy and pretty darn zesty taco recipe. We love to make a little assembly line with the ingredients and top our tacos like it’s a race. We are nerds, I know! Try the recipe for yourself below.

Serves: 4



1 cups of 365 Everyday Value Organic Fire Roasted Corn

2 pieces of 365 Everyday Value Boneless Skinless Chicken Breast

1 chopped fresh jalapeños

favorite taco tortillas of your choice

a handful of halved cherry tomatoes

1 cup of shredded carrots

1 shredded red cabbage leaf



Pat dry your chicken breasts with a paper towel, then coat both sides with salt and pepper. Heat your skillet to a medium high heat then cook the chicken for 15 minutes (until their internal temperature is 165 degrees F). When done cooking the chicken, cut the breasts into bite sized pieces and set aside. Next, heat your tortillas for a few seconds on each side (or until brown spots appear). Next, place the tortillas on the plate. Add chicken and all other desired ingredients. Add dollops of cashew creme and avocado lime sauce to finish off this fun dish! I also finished with a squirt of lime on each taco. Enjoy! 


Sauce Recipes: 

Cashew Creme Sauce Recipe

1 cup of cashews (soaked overnight)

3/4 cup almond milk

1 tablespoon lemon juice

1 teaspoon apple cider vinegar

dash of sea salt to taste


Rinse off cashews and then add all ingredients in a high speed blender. Blend until smooth.


Avocado Lime Sauce Recipe

1 lime

1 avocado

a couple sprigs of cilantro 

dash of sea salt to taste


Blend all ingredients in a high speed blender. Blend to your preference.
